Those of us who live on farms know that springtime equals regular laying by the hens. It's hard to recall the time just as we were heading into winter, when eggs were as scarce as.....HEN'S TEETH! (Did you ever see a chicken that had teeth?? Me, neither!)
The only thing we don't want, in the way of an egg reduction program, is an egg-eating chicken. We've had our share. So, now, MM carefully monitors the egg production, visiting the hen house several times throughout the day, collecting those eggs laid, and encouraging the sitters to finish up!
It's those little hens pictured last June...the ones we raised from biddies, now in full production. Lovely, medium-sized brown eggs. I think the white ones look anemic. I know they're just the same as brown ones, but browns are better somehow. Don't they taste better? At least they look "farmy."
So we do have egg on our faces! And I hear another egg cackle as I write this. Time to go check the coop!

ReplyDeletePotatoe Frittata uses up loads of eggs, a sort of quiche without pastry. We've started to get a few eggs from our 3 hens. Might get a few more hens but with only 2 of us we don't need that much. Just a thought- would egg pasta keep?
ReplyDeleteI have never heard of chickens eating eggs! It must be pretty rare but I can see how big a problem it would be. Unlike many people, we do not shy away from eating our fair share of eggs. We love them and our cholesterol levels are just great.
ReplyDeleteGot a recipe, Debbi? Marlene? All the recipes I've uncovered so far call for lots of cream, few eggs....Potatoe Fritatta...Ruta, recipe please! Barbara, believe it or not that's one of my HUGE Black Giant hens! She's a monster! NCMW, indeed, chickens will eat eggs. We've kept oyster shell and other sources of lime for them, open sack...they're out in the winter garden now, so have free choice of small stones, etc. But some are simply determined to eat eggs. When we find a dedicated egg-eater, she becomes ....chicken and dumplings!

BTW, NCMW: I LOVE your comment concerning "cholesterol" and you and your husband being "just great!" Same here. All these terror stories concerning eating eggs and yellow anything are of dubious veracity. Check out a book entitled, Queen of Fats, by Susan Allport. It shows how industry has extracted all the "good stuff" including Omega 3's from our diets because of spoilage problems on the shelf. Can't keep "real" butter on the shelf for three years if the Omega 3's aren't removed. Among other reasons, including the larger profits made as additives...

I haven't got a particular recipe for frittata because you need a grill as well as an oven so mine wasn't brilliant as I don't have a grill. I just looked on the web but basically you use sliced cooked potatoes and anything else you would use in an omlette, pour over beaten eggs, cook slowly and finish off under a grill and then eat cold, I think. Over the years I too have had the odd egg eater. It's hard to find out which hen it is and I have tried filling a blown egg with a mixture of mango pickle and chilli powder to stop it continuing, with some success. We did have one ex-battery hen who was totally mad and I couldn't stop her from attacking the other hens as well as egg eating.
ReplyDeleteRuta, We had a hen like that, too. She acted more like a rooster than a hen and never laid an egg. Again....chicken and dumplings!
